I too figure up my cost but have never put it on my plan, good idea!
I usually freeze in foil pans, covered in foil. But, I just bought some neat Pyrex dishes w/ lids that are safe for freezer/oven/dishwasher at Walmart. I'm pretty excited to try them out this week!
I just love the recipe links, I will be trying the enchilidas this week and might get brave enough to try the lasagna next week.
We you say you make two and freeze one. Can I ask what kind of containers you freeze them in?
I would much rather my kids eat something that I have precooked on a night when we are busy than a store bought finiished product.

That all sounds delicious! I like that you calculate the meal cost. I did a menu plan Monday awhile back and I need to get back to it. We save a lot more when things are planned out :)
I think it is really cool to calculate how much each meal is costing. I will have to start doing that.
